For the pastry 225g plain flour 1/2 tsp fine salt 150g unsalted butter, diced 75g crème fraiche / cream cheese For the filling 100g caster sugar 2 tbsp bird’s custard powder 250g (hulled weight) strawberries, roughly chopped 8 apricots, stones removed and roughly chopped 1 egg yolk, beaten, to glaze Pastry - put flour, salt and butter into food processor.
