2011年3月9日 · As others have said, crystal malts will give you caramel and toffee flavors. Chocolate notes can be obtained from malt, cocoa, and/or nibs. English toffee is made with sugar and butter and those are the flavors that stand out to me. IMO, the butter component is necessary for toffee to taste like toffee.

It is also ~15% water and, I believe, contains NaCl due to inverting the portion of sucrose with HCl, then neutralizing it with NaOH. Surely, the toffee flavor comes from impurities. I would expect sugars with no potential for flavor contribution would have no taste to speak of either.

2011年3月9日 · We made a Candy Bar Porter and used Werthers Originals to get a toffee candy flavor. It was not the best idea we ever had. lol It turned out a little oily but it was ok. I'm looking into getting a malt to impart what I'm looking for. We used cocoa powder and cocoa nibs for the chocolate flavor and PB2 for the peanut flavor.

I tried it for the Caramel Quad recipe he put in the Radical brewing book and it worked. A toffee aroma and flavor came through. For my quad I used 1 lb XLDME and 1 lb sugar - but that was a 9% beer.
