To make a viable character of any class with any race, you really only needed a single floating ASI (ex. a Deep Gnome barbarian could redistribute one point from INT or DEX to STR). If a character can start as 16 in their main stat, they'll be fine.

Really depends on how your DM does encounters, but unless the tend to have only one or two enemies, I don't think you will get a lot of mileage out of Tasha's at this point.
