If you left it without the isolation coat the matting agent in the varnish would remain on the surface, the solvent would be absorbed into the ground resulting in a white residue.

I have sort of educated myself on varnishing paintings (on canvas and on paper)... but I use an Acrylic varnish (doesn't exactly specify on it what kind), but it is water-based and I found that you can remove is from the painting using water.

I was looking online for what brush to properly apply varnish with (I used a sponge brush last time lol) and they mentioned using an isolation coat in between the painting and the varnish to protect the paint.

Usual process is - painting, isolation coat (often some acrylic medium, yes) and then varnish which is of different chemical composition, like solvent based. Then during removal, solvent will be used to remove varnish, and isolation coat will protect the underlying painting from any chemical reactions or scrubbing.
