According to Dr. Andrew Waterhouse, a wine chemist and professor of enology at U.C. Davis, methanol in wine is derived from pectins, a polysaccharide starch found in fruits and vegetables and, in this case, the skin of grapes.

Cases of methanol contamination have been reported in some of the wines produced from banana, plum and Agrave. Spirits made from mangoes, pears, banana and melon have been shown to contain methanol (Mendonca et al. 2011). In Rwanda, traces of methanol were reported in Urwagwa, a beer produced from banana (Shale et al. 2013).

This paper examines the origins of methanol in grape wine and the quantities typically found in it, as well as in other foods such as unpasteurised fruit juices. The toxicology of methanol and the associated regulatory limits established by competent authorities in various parts of the world are also considered.

2013年8月5日 · Methanol is synthesized by the enzymatic hydrolysis of methol groups on pectins. So quite simply, the more pectins in you must/wash the more methanol there is going to be. Grapes (what i'm most familiar with!) have quite a low pectin content so grape-wine doesn't really have that much methanol in it.
