I think both are fine. But since it's a way to get around saying Jesus as an expletive, like gosh is for God, I'd think the correct one is 'jeez'

Yep. jeez (interj.) minced oath, also jeeze, 1922, American English, euphemistic corruption of Jesus. gee (interj.) exclamation of surprise, 1895, probably euphemistic for Jesus So, "gee" predates the various versions of "jeez". Interestingly this etymology tool doesn't include "geez", but it seems like a sensible combination of the two.
