It is somewhat a close relative of "ok" or "I am following". More like when someone is telling/informing you about something you'd says "hmmmm" to indicated that you're following what is being told. "Ummm" on the other hand means that you are thinking trying to recall or a find an answer to something, usually a question.

I don't think it's a vocalized pause or a filler word, since he's not speaking at length, just prompting the interviewer to provide clarification. There's always the chance that too many mmmm's in "hmmm" or hhhh's in "shhh" may look ridiculous and hyperbolic, but I think it's important to leave the OP with the idea that self-expression is always an individual decision - who knows best, afterall, how long their "hmmmmmmmmmmmmmm" should be?"
