Goku, Gokuu, Gokuh, Gokou, Gokū, and Gokû are all "valid" under different systems when adapting 悟空 into our alphabet. None is any more or less "accurate" than the other. Very early on Toriyama went with a relatively-consistent "Gokuh" while Bandai (whose consistency is all over the map) has effectively always gone with "Gokou" on merchandise.

Sean Schemmel, Gokuh's current FUNi voice actor, wanted to have Gokuh say his iconic Super Saiyan line in FULL, and since the games were already ACTUAL translations from Japanese (unlike the reversioned TV series), this was his chance to do that.
