Dk can cc to a pretty high percent vs shiek, so do some uncle punch practice and memorize those cc percents. Cc grab is insane with dk and once your opponent is conditioned to not attack you, you can go back to bair spacing and empty grabs in neutral. Bair should beat out most if not all of her aerials when properly spaced, it’s huge.
