A hybrid crustacean — curacha is a cross between a large sea crab and a big spiny lobster. It is a large crab with a red color, which stays the same in color even when cooked. You can simply boil or steam the crabs the way you would any regular crabs. In Chavacano cuisine, however, they are made special with the addition of Alavar sauce.
