The weapon-meister dynamic is a good analogue for any intimate relationship, not just romantic partnership. A lot of people like the romantic variety for Soul and Maka but it's not official. Most of the ships aren't, especially in the anime.

The entire conflict of Soul Eater is one of madness and bravery (or thematically, optimism and cynicism), so it's no surprise that the final encounter would also embody this struggle.

Soul then "accepts" and eats the little ogre, much like how he would eat a soul. In the manga: the black blood is ripped from Soul, and by proxy, Maka, during the penultimate chapter.

Midway through the series, Maka makes Soul into a Death Scythe, changing his form and unlocking new abilities as a result of consuming a witch's soul.

Gotta remember the Soul Eater anime only covered a fraction of the actual series. The dynamic of Spirit and Maka goes more in depth and develops more throughout the actual manga series. And Maka was a Daddy's girl as a child until Spirit basically just started spending all his time and money at Chupa Cabra.
