I’ve wondered the same thing because it seems odd to me that “yes” is proper while “yeah” is informal when considering that “Ja” is yes in German, Danish, Swedish, Norwegian, Dutch, Estonian (though spelled with an h at the end) Afrikaans, Icelandic, and Latvian.
