Home-grown green beans are in season from June to September. Store in a paper bag in the salad drawer of the fridge and use within 3-4 days. To freeze beans, wash them well then top and tail.
You can buy cannellini beans dried or canned – borlotti beans make a good replacement if you can’t find them.
Because beans overcook easily in a pressure canner, I add them later, when I’m heating up my home-canned chili for a meal.
