It only takes minutes to make this delicious twist on the traditional stir-fry, with easy-to-make sausage meatballs. The recipe serves one, but can be doubled. Preheat the oven to 160C/140C Fan/Gas 3.
Squeeze out the sausagemeat from the sausages and roll small cherry tomato-sized meatballs out of it, putting them onto a cling film-lined baking tray as you go. Your final tally should be around 40.
Bake in the oven for 15 minutes while you make the meatballs. Squeeze out meat filling from sausages and roll into ping pong ball-sized balls. Take potatoes out of the oven after 15 minutes.
Arrange meatballs on tray, ready for cooking or freezing. In sauté pan on medium high heat, add oil, garlic and shallots and cook until golden. Add sausages, salt & pepper and cook about 2 minutes.
